Grafton’s flagship cheddar is made with raw cow’s milk and aged for two full years to achieve a mature flavor and dense, firm-yet-creamy texture. Not every batch of cheddar has what it takes to age to perfection. The young cheddar is tasted early on to determine which batch has the best trajectory for aging. It must have balanced acidity and moisture that will hold up over time.

Old Chatham Creamery's New Moon Goat Brie is a soft-ripened, bloomy-rind goat cheese with a mild, clean flavor and a dense, velvety texture. It features notes of cream, citrus, and nutty tones, balanced by aromas of fresh-cut grass and earth. The finish is described as mellow and umami.

Nettle Meadow's Garlic & Olive Oil Fromage Frais is a fresh, spreadable cheese made from goat's milk with a tangy, lemony flavor, enhanced by the robust notes of extra virgin olive oil and garlic. This artisan product has a soft, smooth, and creamy texture, similar to cream cheese but lighter, making it a versatile addition to a cheese board, spread on crackers, toast, or bagels, or even melted over pasta.
