Blue Yonder 4oz
Blue Yonder is a cow’s milk blue cheese. Both subtle and complex, this creamy cheese is very approachable. While the rich Holstein milk from which it is made gives the paste lovely yellow tones, it is marbled throughout with pockets and veins of deep blue.

Spanish Manchego 8oz
Manchego, Artisanal the famous Spanish D.O. sheep's milk cheese, is made exclusively from the milk of sheep grazing upon the plains of La Mancha, the land of Don Quixote. The Artisanal Manchego is aged for several months. The cheese is nutty, sweet, and tangy with a firm texture. After 12 months it becomes tastier, saltier and excellent for grating.

Grafton’s flagship cheddar is made with raw cow’s milk and aged for two full years to achieve a mature flavor and dense, firm-yet-creamy texture. Not every batch of cheddar has what it takes to age to perfection. The young cheddar is tasted early on to determine which batch has the best trajectory for aging. It must have balanced acidity and moisture that will hold up over time.
