Mafia Cheddar is a spicy, buffalo wing-flavored cheddar cheese produced by Eden Valley Creamery in Buffalo, New York. The name is a tribute to the "Bills Mafia," the dedicated fanbase of the Buffalo Bills football team

Grafton’s flagship cheddar is made with raw cow’s milk and aged for two full years to achieve a mature flavor and dense, firm-yet-creamy texture. Not every batch of cheddar has what it takes to age to perfection. The young cheddar is tasted early on to determine which batch has the best trajectory for aging. It must have balanced acidity and moisture that will hold up over time.

Vermont Farmstead Cheese Company has joined with New Belgium Brewing to create this addition to our popular Alehouse Cheddar Series, made with Fat Tire Amber Ale. Makes a great pairing partner to any brew, melted on a burger or the ultimate hoppy grilled cheese or mac and cheese. Sold in a case of 12 7oz retail packs (unsliced) with ice packs. A triple cream, soft ripened cow’s milk cheese with a bloomy rind out of the french tradition. Cave aged 6-8 weeks for a soft, rich pate through to center. For the uninitiated, the triple cream pairs 3 parts butter fat for every one part protein. Decadent, creamy and delicious. Pair with warm crusty baguette and libations. Wheels wrapped in breathable paper. Serve at room temperature.
